Sauvignon Blanc 2023
A very special Sauvignon Blanc befitting the last Sauvignon Blanc to be produced by Eldridge. The wine was fermented half in a clay amphora and the balance in large old French oak for 7 months. It is a unique zesty and minerally drop. A delightful wine where only 122 dozen were made in a challenging year, where yield was down.

Wine Profile
Tasting notes
Lemon leaves, lemon grass and fresh snow peas. The palate is zesty, fresh and full of lime juice and finger limes but also has a savoury touch of saline minerality. The texture is quite unique, full of cut apples and pears in flavour but finishes with a crisp, moreish twang.
Vineyard facts
This is the last Sauvignon to come out of Eldridge as the old vines on the eastern border have been replaced with close planted new clone Gamay.

Food Pairing
Grilled scampi with kewpie mayo. Hanonise poached chicken with green and red sauce. Fried wonton skins, prawn tartare and salmon roe. Mature washed rind cheeses.
