5-clone blend. Aromas of hazelnut, citrus & white peach. The palate is very long starting with the nuttiness, moving thru to a bit of lemon curd & a hint of peachy sweetness all kept in check with a lovely fine acidity.
Food match: Freshly shucked oysters or seafood risotto.
The grapes were whole bunch pressed using a gentle air bag press with carbon dioxide cover to retain the varietal fruit character. The juice was fermented in 30% new French Oak with some solids before being moved to 30% new oak for a further 9 months.
Chemistry: 13% Alcohol by Volume, pH 3.48 and Total Acid of 6.4g/L
