The wines were both made from a similar mix of clones and aged in the same oak, however they look radically different. They come from two patches just 10 meters apart. North is big & rich, South is restrained and elegant.
A very special release, only available in PAIRS, up to 3 pairs/order.
Dark colours, Aromas are different, North brooding & dark cherry the South more floral and red cherry.
Each wine contains almost even amounts of each of 4 Pinot clones 115, 777, G5V15. The bunches were destemmed and the whole berries had a 6 day prefermentation cold soak before the wild yeast started the fermentation. The wine was aged in 60% new French oak and 40% 2nd use casks. I opened a pair over the Queens Birthday weekend and have to say that although I still prefer the “South” version they are both delicious with great cherry flavours that linger on the palate for a long time. Enjoy!
Chemistry: 13.5% Alcohol by Volume, pH 3.49 and Total Acid 6.2g/L.
