2011 Fume Blanc

Grassy nose with hints of prunus blossom and lemongrass. The palate begins with an explosion of flavour , lemongrass zing at the front with the blossom and flower flavours following and ending  with a chalky finish.

 

Food match: BBQ prawns. 

The 2011 Fumé was picked after a challenging season of nurturing on the vine. The fruit was carefully pressed, then 50% barrel fermented in new French oak bariques and 50% fermented in stainless steel.

When fermentation was complete, the wine was settled for three weeks in our cool room. The result was very bright colour and lovely flavours. It was transferred to 50% new French oak barriques and four-year-old large French oak barrels, then bottled on October 5, 2011.
