2008 North Patch Chardonnay
The nose has aromas of yeasty/lees with a bit of melon. The palate begins with a bit of pear and melon and moves into the complex barrel ferment character with a creamy flavour and texture giving great length and power.
Food match: oven roasted chicken or baked snapper
Fruit from the patch of chardonnay in front of the tasting room is whole bunch pressed and the juice is settled overnight. The clear juice is barrel fermented with wild yeast. The oak is 40% new French oak, 30% one year old barrels and 30% 2 year old barrels. The wine is bottled after 11 months in oak.
